Manually harvested, and direct pressed before fermentation and malolactic conversion in barrel. After the devastating frost of the 2017 vintage in this area, only a yield of 10 hl/ha of these vineyards was saved. The name 'Semaine 16' refers to the week the frost decimated the vines in mid-April.
But this vintage was not only challenging in the vineyards, as the wine struggled to finish the fermentation in the winery. After adding some pomace rich in yeasts from Savagnin grapes, Valentin was able to continue with extended skin contact before bottling.
We feel like these setbacks made this wine even more special: a real powerhouse that pairs well with creamy sauces, mushroom dishes and rich cheeses.
