A blend of Svatovavrinecké (St. Laurent) and Alibernet (a cross between Alicante Bouschet and Cabernet Sauvignon). For this rosé Pet Nat, the Sankt Laurent grapes are hand-harvested then directly pressed from whole clusters into 20-year-old barrels. The wine ferments for about 40 days without temperature control. Once it is fermented dry, unfermented Alibernet juice is added to provide the sugar for the bottle fermentation and the wine is moved into bottles to finish as a Pet Nat. Undisgorged, zero additions. A refreshing Pet Nat full of ripe red berries. Total production of 500 bottles.
