100% Aligoté from 30+ year old vines, grown on a limestone outcrop located in a remote area in the Hautes-Côtes on a plateau at 320 m altitude. With many stones and fossils, it is perfectly suited to Aligoté. Aged for 14 months in 30% stainless steel and 70% old 350ltr barrels. It is racked for clarification in the spring, and not filtered as per all cuvées. Silky and ripe on the palate, with a savoury note that balances the acidity perfectly. A rich and opulent style of Aligoté that outclasses many wines of grander appellations.
