Grape: Chenin Blanc
100% Chenin Blanc from 10 to 25 year old vines on a slope of clay/silex soils on limestone, certified organic. After a slow pressing of whole clusters, the long fermentations mostly takes place in 4 to 6 year-old barriques, with the younger vines fermented in stainless steel. The wines is then ages in 6 year old barrels. Elegant yet captivating, with ripe and rich fruit, bright acidity, plenty of minerality and a long finish. Capable of ageing for another 10 years, but fresh and vibrant in youth. Aromas of dried pear, pineapple, flowers, honey and wet stone. The finish is bone dry, mineral and long with firm acidity. Perfect with oysters, grilled and fried seafood, white meats and goat cheeses.
