100% Carricante, planted on a small parcel with vines cultivated by mass selection by Salvo in over 20 years of activity. The vineyard was planted in part with the ancient Etnean technique of the "mallet cuttings" or “Magliuoli” without grafting. Vineyard cultivation is done by hand using natural products, and transfer and bottling are carried out according to the phases of the moon. The plot is located in the vineyard Caselle, in the municipality of Milo (eastern Etna) at 750 m a.s.l. After the October harvest, the grapes undergo direct pressing of whole grapes with static and natural settling of the must for about 30 hours. Native yeasts were used for the alcoholic fermentation that lasted for 13-15 days in 2,000L wooden barrels, before ageing another 12 months in these barrels. Bottling: in May, in the second year following the harvest.
