Malvasia di Candia Aromatica 60%, Trebbiano 20%, Ortrugo 15%, Sauvignon 3%, Marsanne 2%, all grown on clay and sandy soils in Monterosso – Castell’Arquato at 260m above sea level. This wine sees a 10-15 day maceration, and then spends 8 months in vats on the lees. This is essentially a 'Method Ancestrale', a traditional process where the wine is fermented and aged on its own lees. The result is a wine that is 'frizzante', yielding less bubbles than one might be accustomed to with other sparkling wines.
