The 2020 vintage was the first time that David picked Chardonnay grapes from his new vineyard in the Barbaresco zone, a north facing plot of 0.33ha, planted in 2017. Due to the cool location, the vineyard is not very suitable for Nebbiolo, but Chardonnay can thrive here. This is the third vintage of this wine. The grapes were harvested in two distinct picks; the first pick early for citrus notes and zingy acidity, and the second to add depth, complexity, and stone fruits, melon and pear. The grapes (all Burgundian clones) are pressed in whole bunches before the juice settles naturally for four hours. A spontaneous alcoholic fermentation with indigenous yeasts is completed in French barriques, of which 30% is new and 70% old, before resting for another ten months in the barriques on the lees, without any stirring, and racked only just before bottling. No fining or filtration.
