Fruktstereo
Sweden
After many years in the restaurant business as runners, dishwashers, waiters, managers and sommeliers, Karl Sjöström and Mikael Nypelius decided to start their own company to spread the word about good produce: Fruktstereo. In their first vintage (2016) they produced everything at Hällåkra Vingård, 30 km outside of Malmö, with fruit from the farm and the villages close by. From 2017 on they got their own place in the old harbour area close to the city center of Malmö, where they now produce everything by hand from fruit to finished product.
When they started off, their only goal was to simply make nice, energetic, fruit driven, and very drinkable ciders from fruit that they picked themselves from abandoned gardens and orchards in the countryside around Malmö. Soon after starting out with apples and pears, they began experimenting with other varieties of fruits and berries in some of their products. After picking, crushing and pressing the different fruits they use neutral vats to ferment the juice. All ciders are fermented with its natural yeasts and without any additives.
Even though they’ve grown and evolved, Karl and Mikael still pick as much of the fruit as possible themselves, with some help of family and friends. Half of the fruit comes from private gardens and abandoned farms, while the other half is "waste fruit" from different places. Farmers that can't sell their stored fruits anymore contact them to find a new home for their fruit that would otherwise be destroyed. We love how Mikael and Karl have taken on this mission to prevent food waste, while at the same time producing these delicious drinks.
