Giovanni Canonica

In the town of Barolo Giovanni Canonica and his family run a small agriturismo and he makes his single vineyards wines. The 1.5 hectares of vines in the Paiagallo vineyard, just above Barolo, are planted with Nebbiolo in the best spots and Barbera in the less interesting plots.

From the vineyard to cellar everything follows the tradition: no herbicides, pesticides or fertilizers; only sulfur and copper treatments; de-stemming; maceration for 30-40 days using only indigenous yeasts; vertical hand press; and finally aging in cement and Slavonian oak.

The younger Tortonian soils of Barolo, comprised of higher percentages of sand and clay, is perfectly represented in the the lighter and more velvety qualities of Canonica's wines.
