Aurora dell’Etna is an "Etna Superiore" from Milo, in the area of Caselle (Etna east), at 800 metres above sea level. The grape varieties are Carricante (90%) and Minnella (10%). The vineyard is about 1.5 hectares.
After a spontaneous fermentation with indigenous yeasts, this wine has aged for a couple months in stainless steel to retain its freshness. A mineral yet powerful wine, with notes of citrus, peach, butterscotch, herbs and honey. Delicious with Spaghetti Vongole, and drinking perfectly right now.
"The 2024 Bianco Aurora is wonderfully perfumed and lively in character, with a cascade of wildflowers, sweet spices and nuances of chamomile. It opens with a pretty inner sweetness as tension builds through florals and hints of sour citrus. This tapers off pleasantly chewy and long with a lemony concentration that lingers. In 2024, Aurora was labeled Vino Bianco instead of Etna Bianco as its alcohol only reached 11.5%. Drinking window: 2025-2030."
