This wine comes from the oldest Quila vineyard planted in 1935 with Muscat. Some of its previous owners by mistake planted some Dolcetto and 3 more varieties when repairing the vineyard in spring and confusing the plots. Having a natural field blend like that, the resulting wine just had to become a rosé pet nat. The Dolcetto and other reds were harvested 1 day before the Muscat, crushed and cold macerated, then pressed together with the white grapes. The wine then was fermented in a 10 hl amphora made of cocciopesto and when 13 g/l of sugar were left was bottled without filtering in order to finish fermentation in the bottle and preserve its fizziness.
