From Jouy-Les-Reims, classified Premier Cru, comes this blend of 50% Chardonnay, 25% Pinot Noir, 25% Pinot Meunier from very stony soils on steep slopes facing south: rare for the region. Vinification is completed in barrels of varying ages for 9 months. Malolactic fermentation is allowed to take place before ageing the wine on lees for a minimum of 36 months.

"Offering up a lovely bouquet of blanched almonds, citrus oil, white flowers and subtle hints of peat, Aubry's 2013 Brut Ivoire et Ebene is medium to full-bodied, taut and incisive, with racy acids, a vibrant core of fruit and a penetratingly saline finish.
