Grape: 100% Sangiovese
In 1999 Colombaia converted to organic farming methods. Now they work completely biodynamically, with natural vinifications in concrete tanks, ageing in large Slavonian oak barrels and bottle their wines without any additions, save the occasional dose of sulfur. This is minimalism at its best.
Despite the extremely hot summer of 2015, this 100% Sangiovese is super fresh. After a long maceration on the skins in stainless steel, the grapes were softly pressed and bottled under a fruity moon in adherence with biodynamic principles and without any sulfites. After 3 year of aging in the bottle, this special cuvée feels deep and round on the palate, but is lifted by a tiny bit of effervescence and offers a unique addition to the more classic wines Colombaia is known for. Slightly chill this wine before drinking.
