A harmonious, balanced sparkling wine with a rich taste and fresh aromas, made with the traditional method, but from Pinot Noir grapes grown in organic vineyards in Burgundy rather than Champagne. Fermentation with natural yeasts took place in old oak barrels, and the base wine was aged for 8 months. After the second fermentation and disgorgement, the wine matured for another 12 months. With ripe fruit and floral notes, this is an excellent aperitif, or pair it with seafood and white meat dishes.
