After the harvest the grapes are destemmed and crushed. The vinification is performed in neutral vats without temperature control and lasts 7 days with regular pump-overs and punch-downs. Post-fermentation maceration for 3 days, before ageing for 9 months in old French oak barriques.
The vineyard: Gaia-Principe is a cru (MGA) of the municipality of Neive. The vineyard is situated in a subzone named Slizza and is a historical property of the family Versio / Taverna. The Nebbiolo occupies the bigger part of the vineyard and is planted on 2 sides of the hill as well as on its top.
The vintage: 2016 is considered the greatest vintage in the Langhe after 1971 and similar to 2015. The climate during the vegetation season was perfect with regular rainfall and high temperatures in July and August. These conditions lead to the ideal maturation of the grapes, especially in terms of polyphenols.
