A Savagnin from young vines, that have been farmed organically since 2014. One thirds is Savagnin Rose, also known as Klevener in Alsace. Valentin harvests manually and macerated this wine on the skins for over one month, resulting in an intense flavour profile and complexity. The alcoholic fermentation and malolactic conversion was carried out in toasted barrels, before the wine aged for another 2 years in demi-muids, 600 litre oak barrels, typically used in the Rhône Valley. Unfiltered and no sulfites added.
A fascinating wine that just keeps evolving over time in the glass, with notes of apricots, abundant flowers and a tannic bite that makes this a serious, powerful food wine.
