100% Gaglioppo, manually harvested and destemmed. Fermented in stainless steel with indigenous yeasts, and macerated for 6 days. The wine is further matured in cement tanks for 18 months and bottled without filtration or fining. It is light red in colour, even in youth, which is typical of this variety. With natural high acidity this is an elegant wine, further enhanced by the salinity which characterizes wines from this region.
