Harvested by hand. Maceration for 2 weeks, fermentation in stainless steel tanks before ageing in concrete tanks on fine lees during 6 months. White pepper notes, and a delicate spicy flavours, fresh and crispy with red fruits and raspberry fragrance. Perfect with charcuterie, during a barbecue or with spicy Asian style dishes.
