Grape: Trebbiano, Malvasia Toscana
In 1999 Colombaia converted to organic farming methods. Now they work completely biodynamically, with natural vinifications in concrete tanks, ageing in large Slavonian oak barrels and bottle their wines without any additions, save the occasional dose of sulfur. This is minimalism at its best.
Trebbiano and Malvasia Toscana from 40-year-old vines. The grape juice stays in contact with the skins for three months to add some soft tannins to the wine and give it some interesting earthy and salty tones. The aromas of white flowers however keep this wine refined and elegant. Aged in old barrel and bottled without any additions. Bottled under the fruity moon at the end of February 2021.
