Pinot Noir from a single parcel of 25 + year old vines in Grand Cru Aÿ. The wine is fermented with Indigenous yeasts, with 10% whole cluster fermentation. It is then aged for 18 months in barrel, 30% of which are new.
"Guillaume Doyard has been working hard on his still wines for several years now, and with the 2020 Coteaux Champenois Aÿ Rouge he is really emerging as a very serious player in this category. Produced from the lieu-dit Bonottes in Aÿ (Doyard has also planted some Burgundian massal selections in his home village of Vertus, so watch this space), it's a sensual, supple, medium-bodied red evocative of cherries, sweet red berries, petals and spices. The wine's filigree texture and mineral finish mark it out as distinctively Champenois, even if the wine's élevage and depth of fruit clearly nod to the Côte d'Or."
