Grape: Sumoll (40%), Ull de Llebre, Garnatxa Negre, Monastrell, Syrah
For the Fosc, the local red grape variety Sumoll is combined with a blend of d'Ull de Llebre, Garnatxa Negre, Monastrell, and Syrah. The grapes are harvested manually using small crates to avoid damaging the fruit, from the vineyard situated in the town of Sant Llorenç d'Hortons (Alt Penedès) at an altitude of 235 metres.
Grown and vinificated separately in concrete, the varieties are blended only in the final phase to make sure they complement each other optimally. The wine is bottled without any intervention or addition, on a descending moon.
It is pale ruby after a couple of days of maceration on the skins, almost like a dark rosé. Tart red fruits are accompanied by spicy notes, and the acidity is balanced by the soft structure of the tannins. Chill slightly before serving.
