Domaine Houillon is run by Aurélien and Charlotte Houillon since 2017. After having worked for years with Pierre Ovenoy and Emmanuel Houillon in the Jura, they decided to start their own project in the Vaucluse. Today they have 9 hectares of vines in Faucon, at the foot of the Mont Ventoux.
Aurélien and Charlotte work biodynamically in the vineyards and take a very minimalist approach in the winery. Their wines still possess the intensity from the grapes of the southern Rhône. The beautiful labels are made from their handmade papyrus.
This classic blend of the region (70% Grenache, 30% Syrah) comes from clay and sand. The grapes were destemmed and macerated for 10 weeks. After the spontaneous fermentation in neutral barrels with indigenous yeasts, the wine was further aged in stainless steel.
