“Col Fondo” style Garganega, with a traditional method second fermentation in the bottle.
After the first fermentation in stainless steel, dried Garganega grape must is added just before bottling. The grape must is rich in sugars and indigenous yeasts, and so the yeasts will start refermenting the sugars. Disgorgement is not done, so the residues of fermentation yeasts and the solid parts remain in the bottle.
Great as an apéritif, with starters or cured meats.
