Most often Julien's top white, Aragonite comes from 40- to 80-year-old massale-selection Chardonnay vines high on the slope, on thin soils of clay, crystallized limestone, and laced with other minerals. This Chardonnay from a vineyard that's been farmed organically since 1954 is aged on the lees for 10 months. Very calcareous and silica-rich silts give the wine a beautiful minerality, giving it the capacity to age beautifully for another 10+ years. The wine bursts from the glass with aromas of golden pear, green apple, apricot, white grapefruit, honeysuckle, and a hint of orange peel. On the palate it is quite rich and luscious, with an enveloping texture that coats your entire mouth. In many ways this is reminiscent of great Chardonnay from the Jura as it has fantastic acidity, and is beautifully textured, long, and mineral.
