Vintage: 2021

Type: Red

Region: Piedmont

Grape varieties: Mainly Nebbiolo, with a small addition of Favorita

The Nebbiolo for this wine comes from Quila's main vineyard in Cossano Belbo, from a steep slope hill facing south at 380 m a.s.l. The second varietal used is Favorita, a local phenotype of the widely planted Vermentino.

This wine is "fermented on drained skins". Mid-fermentation, a red and a white wine are drained and pressed, after that the red juice finishes fermentation on the
mash (skins, seeds and pulp residues) of the white grapes. Winemaker Bisso's came up with this idea while writing his thesis on polyphenol extraction in Portugal and tested multiple co-ferments. He now presses the Nebbiolo and the orange Favorita the same day and pours the Nebbiolo on the dry skins of the Favorita.

A very fruity wine with notes of cranberry, cherries and currants, without the heavy tannins.
