Domaine Houillon is run by Aurélien and Charlotte Houillon since 2017. After having worked for years with Pierre Ovenoy and Emmanuel Houillon in the Jura, they decided to start their own project in the Vaucluse. Today they have 9 hectares of vines in Faucon, at the foot of the Mont Ventoux.

Aurélien and Charlotte work biodynamically in the vineyards and take a very minimalist approach in the winery. Their wines still possess the intensity from the grapes of the southern Rhône. The beautiful labels are made from their handmade papyrus.

This cuvée is made with grapes from a plot with 70 year old vines. The Grenache grapes were destemmed and macerated for 10 weeks, before a spontaneous fermentation with indigenous yeasts, and aged in stainless steel.
