A delicious sparkling wine from Christine and Franz Strohmeier, with Blauer Wildbacher grapes that have been macerated on the skins for 10 to 12 hours. The Strohmeiers have 3.5 hectares of Blauer Wildbacher, a local variety used to make Schilcher, typically a still rosé wine. Because the variety is high in acidity, it is also very suitable for sparkling wines. After gentle pressing, they allow the fermentation to start spontaneously in stainless steel tanks to preserve the fruitiness of the wine. The second fermentation to create the bubbles is then carried out in bottle, without any filtration.
